2013 Family Quilt Recipe (Salmon Salad) |

Salad dressing that you will use to prepare salad.
3 T sugar
1 t. salt
1 t. mustard
a sprinkle of cayenne pepper
4 to 6 t. flour
4 T. melted butter
6 egg yolks or 4 eggs
1 1/2 c. milk or water
1/2 c. vinegar
Directions:
1. Mix sugar, seasonings, and flour together in saucepan; add fat and blend.
2. Beat yolks until thick and add milk, stirring.
3. Combine yolk mixture with sugar mixture. Cook, stirring, until mixture begins to thicken. Cool. Add vinegar and reheat, continuing to cook and stir until thickened.

Ingredients: |
3 c. salmon
2 c. diced celery
2 hard-cooked egg, chopped
4 t. chopped pickle
1 t salt
6 T. cooked salad dressing

Directions: |
1. Remove bones from salmon and flake meat with fork.
2. Add celery, egg, pickle, and salt to salmon. Add dressing and toss mixture lightly.
3. Chill salmon mixture, tightly covered. Serve on greens.
