Tropical Crisp - 4 c. chopped strawberries, 3 c. chopped pineapple, 1/2 c. sugar, 3 T. cornstarch, and 1/4 t. salt. Top with 1 c. granola and sweetened shredded coconut and 2 T. melted butter.
Spicy Strawberry Salsa - 1 1/2 c. finely chopped strawberries, 1 c. finely chopped bell peppers, 1/2 c. finely chopped red onion, 1/4 c. lime juice, and 2 T. minced jalapeno and 1/2 t. salt.
Skinny Shortcake Poppers - 1 lb. strawberries, 1/2 c. plain nonfat Greek yogurt, pound cake, and 3 T. brown sugar.
Strawberry Agua Fresca - 2 lbs. strawberries, quartered, 2 c. water, 1/2 c. sugar, and 2 T. lime juice.
Sweet & Savory Grilled Cheese - 1 1/2 c. chopped strawberries, 1 T. balsamic vinegar, 4 slices mozzarella cheese, and 8 slices challah bread.

Tropical Crisp
1. In 2-qt. baking, toss 4 c. chopped strawberries, 3 c. chopped pineapple, 1/2 c. sugar, 3 T. cornstarch and 1/4 t. salt. Top w. 1 c. each granola and sweetened shredded coconut and 2 T. melted butter; bake @ 350F 35 min. or until bubbling.
Spicy Strawberry Salsa
1. Mix 1 1/2c. finely chopped strawberries, 1 c. finely chopped bell peppers, 1/2 c. finely chopped red onion, 1/4 c. lime juice, 2 T. minced jalapeno and 1/2 t. salt. Serve w. tortilla chips.
Skinny Shortcake Poppers
1. Trim stems off 1 lb. strawberries; hollow out centers using small knife. Fill w. 1/2 c. plain nonfat Greek yogurt. Roll yogurt ends in mix of 3 T. packed light brown sugar and 1 slice of pound cake, toasted and finely crumbled.
Strawberry Agua Fresca
1. Puree 2 lbs. strawberries, quartered; 2 c. water, 1/2 c. sugar, and 2 T. lime juice in blender until smooth. Strain into pitcher through fine-mesh sieve, pressing and stirring w. spatula (discard solids). Serve immediately over ice, or cover and refrigerate up to 1 day.
Sweet & Savory Grilled Cheese
1. Toss 1 1/2 c. chopped strawberries and 1 T. balsamic vinegar in bowl; sandwich berries and 4 (1/4-in.-thick) slices fresh mozzarella cheese between 8 (1/2-in.-thick) slices challah bread, making 4 sandwiches. Grill on med. 4 min. per side or until cheese melts.
