2 cups peeled and sliced onions
2 T butter or olive oil
3 cups peeled, cored, and sliced firm apples, such as Granny Smiths
1/8 t ground allspice, mace, or cinnamon
Sugar, if needed, to taste
Salt and freshly ground black pepper to taste
Minced fresh parsley leaves for garnish

1. Place the onions in a large, deep skillet over medium heat and cover. Cook for 10 minutes, stirring once or twice, until they are dry and almost sticking to the pan. Stir in the fat.
2. Add the apples and spice. Turn the heat to low, cover, and cook, stirring occasionally, until the apples begin to soften, about 10 minutes.
3. Uncover and taste; add sugar if the apples have not contributed enough sweetness. Season with salt and pepper, turn the heat to medium, and cook until the apples are completely tender but not mushy, a few minutes more. Garnish and serve.
