Potato Salad |

Description: |
Boil diced potatoes until slightly tender with fork. Or, you can always microwave potatoes if in a hurry, I do :) Same mixture can be used for making cole slaw.

Ingredients: |
3 T all-purpose flour
2 T Sugar
2 T mustard
2 t Salt
3 c Water
8 c diced, cooked, and peeled Potato
Additional, if desired
1/2 to 1 c cider vinegar
8 slices bacon

Directions: |
Fry bacon lightly. Remove bacon and reserve. Heat 4 tablespoons bacon fat. Blend in flour, sugar, salt, and mustard. Add vinegar (if desired) and water gradually until smooth. Cook over low heat, stirring, until thickened. Add potatoes and heat, mixing lightly. Sprinkle with a pinch of red pepper, or paprika, and reserved bacon.
