1. In a 11/2-qt. pan, heat milk until steaming. Meanwhile, in a large bowl, beat eggs, sugar, and vanilla until well blended but not frothy.
2. Gradually stir in steaming milk.
3. Pour mixture into a shallow 11/2-qt. baking dish; sprinkle with nutmeg. Bake at 350 degrees, uncovered. Remove custard from hot water. Let stand for 10 min., then serve; or cover and refrigerate until cold.
