1. Allow ice cream to soften slightly in refrigerator (about 5-10 min., check frequently). Meanwhile, in a large mixing bowl, chill chopped/crumbled pie pieces in the freezer.
2. Add ice cream to bowl and fold in pie pieces. Transfer back to ice cream container and place back in freezer for at least 30 min. before serving.
3. If using apple pie, add cinnamon to the vanilla ice cream and pie mixture. If using pumpkin pie, mix in pumpkin pie seasoning.
