|Corn Salad w. Red Peppers|

|It can be served as a warm dish by placing in the microwave for a minute or two, or just heat on the stove.
|1/3 c. distilled white vinegar
2 T. extra-virgin olive oil
1 T. sugar
1/2 t. salt
1/4 t. black pepper
3 c. cooked corn (6 medium ears) or frozen corn, cooked
2 red bell peppers, seeded and cut into small cubes
2 jalapenos, seeded and cut into small cubes, or to taste
1/4 c. chopped cilantro
2 T. fresh lime juice
|1. Whisk together the vinegar, oil, sugar, salt, and black pepper in a large bowl. Add the corn, bell peppers, jalapenos, cilantro, and lime juice, and toss everything together.
